Mike :) In the Restaurant and Food in general Forum there are quite a few threads on veg food..
Just use search ..Put in Vegetarian select your forum and presto..answers.. :)

Planeta Vegetariano! they have fab buffets (i think both breakfast and lunch, and of course you can have dinner also). it's not fancy, but fantastic food. http://www.happycow.net/reviews.php?id=1436j

i don't know of any more "fancy" restaurants that are strictly vegetarian. maybe someone else does.

You might do well at Barcelona Tapas. All of the dishes are served on small plates, meant to be shared, but that means you can try lots of different foods without breaking the budget. They have a website so you can see the menu. They serve 2 wonderful breads complimentary, with olive oil for dipping. Best bread I have ever had in Vallarta.

You can have your meat while she sticks with an array of veggie dishes, pasta, and salads. The cheese platter is wonderful too.
