Probably many of you do the same thing as I do..When I get a meal I enjoy at a restaurant I try and figure out the ingredients and do a copycat recipe at home.
Did this with Pizza..Could not get Saskatchewan Pizza(best)in Alberta so copied as good as I could Sask. Pizza..
A meal I had a couple of times last week at The Raven in Woods Bay by Bigfork Montana..
Caribbean (Mexican) Chicken and Sweet Potato Fries..Sylvia's Version (easy to make)
Barbecue boneless skinless chicken breast.
Grill pineapple ring till golden brown
Toast buns
Top with Salsa..I used Mango and Lime but will try a different one next time)
Sweet Potato Fries..
Yams? We have with special meals....Goes good with Turkey..
We boil them..mash them or make a yam casserole
I had not had Yams..Sweet Potatos Fried before.. I was in for a treat...
I guess popular in some States and I heard that a few Calgary Restaurants are starting to serve them..

I try and avoid deep frying but chips must be fried..
I prepared the Sweet Potatos like I do Potato Fries..
French cut Fries. Little harder to cut than potatos so watch your fingers.
Add to bowl of Ice water and soak
Drain well
Deep fry till about 3/4 cooked
I take the fries out of the oil and drain fat off them and set aside till dinner is ready then toss back in oil for a few min's to crisp them..
Salt after removing them from oil
Tastes good with a Margarita..
I had a beer and clam juice with mine at home...
