Define "fun things". Are you talking day or night, tours, clubs day trips?
New Year's eve you can head to the Malecon or the south side, everyone is out celebrating.

The Festival de Guadalupe runs from the 1st to the 12th, it is a great cultural experience but you have missed that. Like I said all the clubs along with along the Malecon and Olas Altas people will be everywhere partying on NYE.

Whale watching is going on right now so you might consider a whale watching trip.

You could do a day trip by bus to Bucerias and walk around the town and have lunch/drinks there to see a different town. You can catch the bus in front of Walmart/Sam's Club. There are always people there willing to tell you which bus to get on.

Take a Water taxi to Yelapa for the day (accessible only by boat). Hike up to the waterfall or rent a horse and ride up.

There are many things to do, but I don't know exactly what type of activities you are looking for.

again---if we know where you are staying---we can suggest some "walking distance" things and free or low cost way to do things
