Two Puerto Vallarta restaurants—Icú and Pancho’s Takos—have been officially recognized in the 2026 MICHELIN Guide Mexico, marking the first time Puerto Vallarta and Jalisco have been included in the prestigious culinary guide.
The latest selection was unveiled on May 20, 2026, during an awards ceremony in Guadalajara. Both restaurants were named in the Michelin Selected category, meaning they were formally evaluated by Michelin inspectors and recognized for quality and consistency.
Icú, located in the Zona Romántica, is an intimate, chef-driven restaurant offering refined dining experiences. Chef-owner Mauricio Leal creates seasonal menus highlighting Mexican ingredients and regional flavors. Standout dishes include blue corn quesadilla de pulpo y pancetta, risotto adobo with shrimp, and flan de cajeta. Michelin inspectors praised the elegant dining room and Mexican-focused wine list.
Pancho’s Takos, also in the Zona Romántica, represents the other end of the culinary spectrum—authentic regional taco culture and street food. The long-standing favorite is known for overflowing portions of thinly sliced al pastor meat piled high on corn tortillas, finished with fresh cilantro and diced onion. Visitors should be prepared to wait in line and bring cash.
The inclusion of both restaurants highlights Puerto Vallarta’s ability to balance innovation with tradition, signaling growing international attention on the city’s evolving culinary identity.
