Cuisine Without Borders Brings Nogada Menus to Puerto Vallarta

Cuisine Without Borders: Nogada Edition is running in Puerto Vallarta from August 20 through September 20, turning the seasonal chile en nogada into a month-long dining experience at Velas Vallarta, Casa Velas and Táu Beach Club.

The official Puerto Vallarta tourism board lists the event as a first edition built around Mexican hospitality, creativity and the iconic walnut-based nogada sauce. The menu gives the traditional poblano dish an international twist, drawing on techniques and ingredients from the United States and Canada while keeping the Mexican recipe at the center.

Organizer-side coverage from Velas Resorts says the new format grows out of three earlier years of Festival de la Nogada programming at Velas Vallarta, now expanded under the Cocina sin Fronteras concept. Additional coverage details three chile en nogada interpretations representing Mexico, the United States and Canada, with chefs Sandra Macías and Adán Macín tied to the proposal.

For visitors, the timing is useful: the event bridges late summer and the run-up to Mexican Independence Day, when chile en nogada is especially popular for its green, white and red colors.
