I have not stayed at any of the locations you mentioned, but I am familiar with where most of them are located (except Sun Club,Universal, and Sea Garden).
From your interests I would recommend getting a location as close to downtown, or oldtown south of the river. The Sheraton Buganvilias Resort is the closest one I know about.
There are lots of comments about most of the hotels on this bulletin board under Hotels and also under trip reports. Do yourself a favor and read as many as you can. Also look athttp://pub69.ezboard.com/btodopuertovallarta for alot more related info.
The sites all sound like they are all inclusive resorts, so you are not likely to get a room with a kitchen, check when you make the reservations.
