Velas Vallarta-confused about AI

Have stayed at Velas 3 times since 96 and it is always nice. We stayed at an all inclusive last time and preferred the Velas. I think the AI option is a drink credit not sure. We have only eaten at the Beach front place they have very good breakfast buffet. As it is a suites hotel we bought our own stuff ie liqour and food. The place looked great on Nov 16. visited some friends. Have not used the kiddy option as our kids are older. Next time will stay at Velas..

If I understand correctly, we can eat at the beach front restaurant free of charge under the AI option but we would pay extra to dine in the gourmet Italian, is that correct?

We are not big drinkers but also curious if we would pay extra for bar drinks if we choose to have some?
