We just got back from a week in Nuevo Vallarta. If you love great seafood, then this is a must!! Also when you order beer they bring you an ice bucket with 6 8oz bottles and after 9pm gave us a delicious dessert drink made with kahlua. From the road, this restaurant may look a little suspect, but it was wonderful.

Also, I would definitely check out Bucerias and a place called Messon Bay which is right on the beach. I went on Wednesday night and they had a buffet dinner that featured rib eye steak (wonderful), bbq ribs, chicken breast and pork sausage. It was outstanding!!
