Okie Dokie - Sorry working for a change
there are two kinds we usually deal with here. Mexican (made with tequila) and Spanish (made with brandy). you take a good wine goblet, and moisten the rim with citrus juices and then dip in sugar. whatever alcohol you choose you put a shot or so in each goblet... with a sterno flame going you start warming the alcohol and carmelizing the sugar on the rim. the alcohol will ignite for you. with a shaker full of cinnamon (lots of sparks when you shake this towards the flame)... looks like sparklers.... then you add the coffee to this ... the alcohol is mostly burned off here... next taking two stainless steel gravy boats... start warming one of them on the flame, add the Kaluha to the heated boat.. and continue heating as the alcohol ignites again... now the show starts, pouring from one gravey boat to the other, letting the blue flame cascade up and down... then pour from one boat to the other boat into the goblets... cover and fill with whipped creame... sprinkle more cinnamon on to the creame... then get some more kaluha flamed up to pour over the glass to hand to the customer lit up... top with a cherry and there you go... SEXY SEXY Coffee.....

enjoy....

DELETED
It is too bad that a place that use to be there closed. Originally Las Brisas and then Guamachilitos on A. Serdan. They called theirs Cafe YaYa and was just unbelievable. Made differently then most as it started with egg whites. I do not recall all the ingredients, but I do remember Brandy, Kaluha and Tequila. It was indeed a show to see prepared.
Will do.
