Easy! You are in the land of fresh vegetables and fruit!
Planeta Vegetariano, Papaya 3, Tutti-Fruiti, and 100% Natural all have/are vegetarian.
Almost any restaurant will make a vegetarian dish for you- or give you a huge mix of steamed/grilled veggies/pasta/rice and bread.
Expresso Pizza has veggie pizza, quite a few varieties, same with La Piazetta.
There are tons of vegetarians in Mexico, also many holistic and natural food shops.
Most breakfast places have tons of dishes that have no animal products- and plenty of places where you can get a meatless sandwich...Delicioso, Cafe Due, Memories Cafe...and so on. Lots of smoothie places opening up or places having smoothies.
Papa Dons has veggie pizzas for 50 pesos for a whole pizza- they are a new little franchise pizza place- there is one across from Elktra near the flea market on the way to the Plaza.
There is also a place in Plaza Caracol, inside the Gigante entrance that is called Salad! Salad! and it is a salad bar, pretty good!
If you eat fish, eggs, or cheese, you arein luck as all are fresh and widely available.

I cannot recommend the above more than I do! We ate there for lunch past May and were so impressed, plus the spot is so pretty. Here is my write up:

Hidden secret since 1995 [10 tables] which is worth the trek up the small hill near the Guadalupe Church. All you can eat breakfast buffet for 45p, lunch/dinner buffet for 65p. From soup to dessert, including fresh beverages and many choices of side dishes, salads, entrees as soy enchiladas, eggplant, banana lasagna, couscous, beets, wheat-less cakes. Nothing but plants and plant products used. Meal choices change daily but plentiful. A special filling meal in a wonderfully colorful cafe.
